Gingerbread Cupcakes With Cream Cheese Frosting

Ginger and spice flavored cupcakes with lemon cream cheese frosting.
Ingredients -
 

5 tablespoons Unsalted Butter, softened
1/2 cup White Sugar
1/2 cup Unsulfured Molasses
1 Egg
1 Egg Yolk
1-1/4 cups All-Purpose Flour
1 tablespoon Dutch Process Cocoa Powder
1-1/4 teaspoons Ground Ginger
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Allspice
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Salt
1 teaspoon Baking Soda
1/2 cup Hot Milk

Lemon Cream Cheese Frosting:
2 tablespoons Unsalted Butter, softened
2 ounces Cream Cheese, softened
2/3 cup sifted Confectioners' Sugar
1/4 teaspoon Lemon Extract

 
Preparation:
 

1. Preheat oven to 350 F.

2. Line regular muffin pan with 12 paper liners.

3. Cream unsalted butter with white sugar.

4. Pour in molasses, egg, and egg yolk to butter mixture.

5. Stir until smooth.

6. Sift all-purpose flour, Dutch process cocoa powder ground ginger, ground cinnamon, ground allspice, ground nutmeg, and salt.

7. Dissolve baking soda in hot milk.

8. Stir flour mixture into butter mixture. Stir until combined.

9. Stir in the hot milk mixture.

10. Stir until smooth.

11. Pour cupcake batter into paper liners.

12. Bake 20 minutes. Remove and cool cupcakes before frosting.

Lemon Cream Cheese Frosting:
1. Add unsalted butter and cream cheese to small bowl. Stir to combine.

2. Stir in confectioner’s sugar. Beat until fluffy.

3. Stir in lemon extract and beat.
