Caramel Apple Cupcakes

Cupcakes from carrot cake mix, combined with chopped tart apple. Topped with melted butterscotch chips. and a sprinkling of finely chopped pecnas.
Ingredients -
 
1 (18 ounces) package Carrot Cake Mix
3 cups chopped, peeled Tart Apples
1 (12 ounces) package Butterscotch Chips
1 cup finely chopped Pecans
 
Preparation:
 

1. Make the cake batter according to the package directions.

2. Fold in the chopped apples.

3. Fill 12 greased or paper-lined jumbo muffin cups 3/4 full.

4. Bake the cupcakes at 350 degrees for 20 minutes or until a toothpick inserted comes out clean.

5. Melt the butterscotch chips in a saucepan on very low heat.

6. Spread the melted butterscotch chips over the cupcakes and sprinkle with chopped pecans.

Filling Cupcake Cups With Batter
To bake traditional size cupcakes, fill the individual cupcake cups 2/3’s of the way up with cupcake batter. Fill cups ¾ of the way if you want the cupcakes to overflow the cups and expand outward.

Fill cupcake cups half of the way up if you plan to add nuts, chocolate or other mix-ins, so the cupcakes don’t overflow too far when baked.
