1. Make the cake batter according to the package directions.
2. Fold in the chopped apples.
3. Fill 12 greased or paper-lined jumbo muffin cups 3/4 full.
4. Bake the cupcakes at 350 degrees for 20 minutes or until a toothpick inserted comes out clean.
5. Melt the butterscotch chips in a saucepan on very low heat.
6. Spread the melted butterscotch chips over the cupcakes and sprinkle with chopped pecans.
