Chocolate Cherry Cupcakes

Bittersweet chocolate and cherry jam combine in this delicious cupcake. Baked until golden and frosted with a cherry chocolate icing.
Ingredients -
 
Cupcakes:
1/2 cup Unsalted Butter, room temperature
4 ounces Bittersweet Chocolate, coarsely chopped
1 1/3 cups Cherry Jam
1/2 cup Sugar
Pinch Salt
2 large Eggs, beaten
1 cup Self Rising Cake Flour

Icing:
4 ounces Bittersweet Chocolate, chopped
1/3 cup + 1 tablespoon Heavy Cream
12 Natural Colored Glace Cherries ( I used maraschino cherries)

 
Preparation:
 
Cupcakes:

1. Heat the oven to 350 degrees.

2. Line 12 standard size cupcake pan cups with paper liners.

3. Melt the butter in a saucepan.

4. Stir in the chocolate.

5. Let the chocolate begin to soften over the heat for approximatlely1 minute.

6. Remove the chocolate from the heat.

7. Stir until smooth and melted.

8. Stir the jam, sugar, salt and eggs into the chocolate mixture.

9. Stir in the flour.

10. Spoon 1/4 cup batter into each cupcake cup.

11. Bake for 25 minutes or until a toothpick in the center comes out clean.

12. Let the cupcakes cool in the pan for 10 minutes.

13. Turn the cupcakes out.

Icing:

14. Combine the chocolate and cream in saucepan.

15. Bring the mixture to boiling.

16. Transfer to a bowl.

17. Beat until thick and smooth.

18. Ice each cupcake with 1 tablespoon of icing.

19. Garnish each cupcake with a cherry.
