Basic Buttermilk Batter

Batter for a simple but tasty buttermilk cupcake with a hint of vanilla.
Ingredients -
 

3/4 cup Unsalted Butter (1-1/2 sticks), softened
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1-1/2 cups Granulated Sugar
1 cup Buttermilk, room temperature
3 Large Eggs, at room temperature
1-1/2 teaspoon Vanilla
2 cups Bleached All-Purpose Flour

 
Preparation:
 

1. Arrange the rack in the middle of the oven and preheat to 350 degrees.

2. Line the bottom of a cupcake or muffin pan with paper liners.

3. In a large mixing bowl, beat the butter and sugar with an electric mixer for 5 minutes at medium speed until light and fluffy.

4. Beat in the eggs, one at a time.

5. Scrape the bowl and beaters and beat well to incorporate.

6. Sift the flour with the baking powder and baking soda.

7. Add a quarter of the flour mixture to the butter/egg mixture.

8. Add the vanilla and a third of the buttermilk.

9. Repeat beginning and ending with the flour mixture and scraping well after each addition.

10. Pour the batter into the prepared pans and spread to edges with a spatula.

11. Bake 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.

12. Cool in the pans on a rack for 5 minutes.

13. Turn pans onto the rack.

14. Cool completely before frosting.

Marbleized Cupcakes
Prepare a vanilla batter and a chocolate batter. Lightly swirl them together with a wooden spoon or spatula. You can pour batter of one flavor into individual cupcake cups and pour a second batter on top. Swirl to combine with a knife.
